Enriched Taftoon and lavash flour is a flour that is husked between approximately 5.11-18% depending on the customer's needs and uses the outer layers of wheat and to some extent the grain kernel (endosperm). For this reason, we see high ash and fiber in this flour, and therefore the nutritional properties of this flour have a high percentage of protein and fiber. Baking flour is enriched with iron and folic acid and therefore meets the nutritional needs of different groups, especially children, women and the elderly.
The shelf life of this flour is predicted to be up to 2 months under standard conditions due to its richness in fiber and to some extent the presence of fatty acids.
